There is a feature in macOS Monterey to prepare a Mac for resale, transfer, or disposal. Among other things, the SoC encrypts the stored data using a key unique to a particular Mac Studio … so you can't pull the SSDs, take them to another Mac Studio, and read the contents. It would appear that the SSD slots are not necessarily for standard M.2 SSDs – but perhaps for some type of raw flash storage modules managed by the M1 Max or Ultra SoC.
